Chicken Pesto Parmesan

Ingredients

  • 3 Boneless Skinless Chicken Breast Halves, sliced into 1 inch wide strips
  • 1 whole Eggs, whisked in prep dish
  • 14 cup Milk
  • 1 teaspoon Salt
  • 1 cup Panko Bread Crumbs
  • 1 teaspoon Pepper
  • 12 cup Coconut Oil
  • 1 large Yellow Onion, chopped into 1/4 inch pieces
  • 1 Shallot
  • 1 large Green Pepper, cut into 1 inch squares
  • 1 cup Sliced Mushrooms
  • 6 whole Garlic Clove, minced
  • 4 cups Spaghetti Sauce
  • 12 cup Fresh Pesto, or substitute 2 tablespoons basil
  • 1 cup Shredded Parmesan
  • 14 cup Fontina Cheese, finely shredded
