Ingredients

  • 1 Lemon, zest
  • 1 12 pounds Summer Squash, or zucchini, cut into 1/6-inch slices
  • 12 teaspoon Fine Sea Salt
  • 14 cup Fresh Oregano
  • 14 cup Fresh Italian Parsley
  • 1 large Garlic Clove, chopped
  • 14 teaspoon Fine Sea Salt
  • pinch Red Pepper Flakes
  • 12 cup Extra Virgin Olive Oil
  • 14 cup Unsalted Butter
  • 2 cups Bread Crumbs, **use GF as necessary
  • 12 pound Waxy Potatoes, sliced transparently thin
  • 34 cup Gruyere, grated on a box grater (or feta might be good)
