Ingredients
- 1 large Boneless Pork Tenderloin, marinade pork in olive oil and a rub of your choice. i used a pre-prepared rub from mccormick, sweet and smokey, grill mate. it does not need to sit long 20 minutes will be sufficient. grill on your lectric grill using a high heat and panini feature for 8
- 1 large Romaine Lettuce, clean, dry and chop to bite size pieces.
- 15 Grape Tomatoes, i like to cut them in 2-3 pieces depending on size. i mixed golden and red but using red it fine.
- 1⁄2 large Chopped Onion, i used a sweet florida onion but any onion of your choice will work
- 20 Almonds, you can add whole or sliced and the quanity is up to you for taste
- 1 whole Star Fruit, slice the star fruit and cup into quartes. you may substitute sliced apples if you like!
- 1 large Cucumber, peel, de-seed, and slice.
- 1⁄2 cup Extra Virgin Olive Oil, i used orange flavored evo but you may add a little orange juice to sweeten and flavor.
- 1⁄3 cup Vinegar, i used a rasberry vinegar but you may boil down a 1/2 cup of rasberry's and add in to a white wine or apple vinegar. add salt and pepper to taste and a dash of sugar if needed. whisk together with evo for your dressing.
