- 1⁄4 teaspoon Dried Oregano, double if using fresh
- Ground Pepper, to taste
- 4 Medium Sized New or White Potatoes, chopped into large chucks
- 4 Vegetable Bouillon Cubes
- 2 large Zucchini, cubed
- 2 15 to 20 Ounce Cans Kidney Beans, drained and rinsed
- 1 box Frozen Chopped Spinach, thawed and squeezed dry
- 1⁄2 cup Shredded Parmesan, good-quality for garnish.
