Ingredients

  • Olive Oil
  • 1 Onion, diced
  • 4 Garlic Cloves, chopped
  • 1 Yellow Summer Squash, sliced
  • 1 cup Green Beans, trimmed, cut in 1 inch chunks
  • 1 Eggplant, peeled, sliced into bite size pieces
  • 1 Bell Pepper, any color, cored and sliced
  • 2 cups Fresh Baby Bella Mushrooms, trimmed and sliced
  • 1 cup Cherry Tomato, halved
  • Sea Salt, to taste
  • Pepper, to taste
  • Parsley, to taste
  • Basil, to taste
  • Red Pepper Flakes, to taste, add any herbs that you prefer, these herbs are suggestions.
  • 1 tablespoon Balsamic Vinegar, or more to taste
  • 1 cup Quinoa
  • 2 cups Water
  • 14 teaspoon Salt, optional
