Cozy Red Wine Braised Grass Fed Beef Served In A Smashed Blue Cheese Potato “bowl”

Ingredients

  • 2 tablespoons Vegetable Oil
  • 3 pounds Beef Roast, grass fed, pcc label, about 2 inches thick
  • 1 Sweet Onion, or 3-4 shallots, peeled and coarsely chopped
  • 1 Carrot, coarsely chopped
  • 2 stalks Celery, coarsely chopped
  • 1 tablespoon Fresh Thyme, chopped
  • 1 tablespoon Fresh Rosemary, chopped
  • 1 tablespoon Fresh Sage, chopped
  • 2 Fresh Bay Leaves
  • 1 tablespoon Orange Zest
  • 1 12 tablespoons Paprika, use smoked if you have it
  • 12 teaspoon Ground Cloves
  • 12 teaspoon Ground Cinnamon
  • 2 cups Dry Red Wine, washington state
  • 4 cups Beef Broth
  • Salt and Pepper, to taste
  • Mashed Potatoes, blue cheese mashed
  • Fresh Parsley, chopped
  • Sour Cream
  • Horseradish
