- 3 pounds Beef Roast, grass fed, pcc label, about 2 inches thick
- 1 Sweet Onion, or 3-4 shallots, peeled and coarsely chopped
- 1 Carrot, coarsely chopped
- 2 stalks Celery, coarsely chopped
- 1 tablespoon Fresh Thyme, chopped
- 1 tablespoon Fresh Rosemary, chopped
- 1 tablespoon Fresh Sage, chopped
- 2 Fresh Bay Leaves
- 1 tablespoon Orange Zest
- 1 1⁄2 tablespoons Paprika, use smoked if you have it
- 1⁄2 teaspoon Ground Cloves
- 1⁄2 teaspoon Ground Cinnamon
- 2 cups Dry Red Wine, washington state
- 4 cups Beef Broth
- Salt and Pepper, to taste
- Mashed Potatoes, blue cheese mashed
- Fresh Parsley, chopped
- Sour Cream
- Horseradish
