Easy Lo Mein

Ingredients

  • 12 ounces Soba Noodles, or whole wheat spaghetti noodles.
  • 14 cup Reduced Sodium Soy Sauce
  • 1 teaspoon Cornstarch
  • 1 tablespoon Cornstarch
  • 1 cup Low Sodium Chicken Broth
  • 2 teaspoons Sugar
  • 2 Boneless Pork Chops, (about 12oz) cut into thin strips.
  • 2 tablespoons Rice Wine Vinegar
  • 2 teaspoons Canola Oil
  • 4 cups Cabbage, thinly sliced (about 1/2 head)
  • 1 medium Carrot, grated
  • 1 cup Snow Peas, halved, crosswise
  • Salt and Pepper
  • 2 small Scallion, thinly sliced.
