White Minestrone With Fusilli

Ingredients

  • 5 tablespoons Extra Virgin Olive Oil
  • 14 pound Pancetta, chopped, (optional)
  • 1 large Fennel Bulb, quartered, thinly sliced, plus a handful of fronds, chopped
  • 12 head Savoy Cabbage, thinly sliced or chopped
  • 1 Onion, quartered lengthwise and thinly sliced
  • 4 cloves Garlic, sliced or chopped
  • Salt and Pepper

  • Grated Parmesan Cheese, plus the rind and some for shaving
  • 1 large Fresh Bay Leaf
  • 4 cups Chicken Stock, or vegetable
  • 1 can White Beans, rinsed, 14 oz can
  • 1 cup Fusilli (Corkscrew) Pasta
  • 12 cup Frozen Peas
  • 1 cup Fresh Herbs, (tarragon, basil, parsley, mint- choose 2)
  • 3 tablespoons Toasted Pine Nuts
  • 12 small Lemon, juiced
