1/4 cup Szechwan peppercorns
1 tbsp coriander seeds
1 tbsp cumin seeds
1 tbsp fennel seeds
1/2 cup kosher or coarse sea salt
1 tsp Chinese five-spice powder
Potatoes
2 lbs small waxy new potatoes, rinsed and halved
1 tsp salt
vegetable oil
1/2 to 1 tsp Szechwan Salt and Pepper (see above)
1/2 cup chopped fresh cilantro leaves
