16-1/2 oz. red wine vinegar
6 Tbsp. cold butter
To taste salt and black pepper

2 Tbsp. lemon zest
3 qt. baby arugula
Assembly
1.5 qt. dry bread crumbs
1 doz. eggs, beaten
