6 qt. Watercress sprigs

2 qt. or 1 1/2 lb., Fresh bean sprouts, rinsed and drained

1 qt. or 1 lb. 4 oz., Red onion, vertically sliced

3 qt. or 8 lb., Fresh pears, peeled, cored and sliced or canned pear slice, drained*



Lemon Ginger Vinaigrette

1 qt. or 32 oz., Vegetable oil

2 cups or 16 oz., Lemon juice

1 cup or 8 oz., Balsamic vinegar

1/2 cup Sugar

1/2 cup or 2 oz., Fresh ginger root, minced



Steamed Alaska King Crab

100 legs or 36 lbs., Alaska King Crab split legs, thawed

3 cups or 24 oz., Vegetable oil

3 cups or 24 oz., White wine

1/2 cup or 2 oz., Fresh ginger root, minced

*If using fresh pears, toss with lemon juice to prevent browning.
