pint olive oil

2 - 3 aubergines, sliced crossways

2 - 16oz jars roasted red peppers in brine, drained

2 dozen basil leaves

Salt and freshly ground black pepper

9 oz ready-to-use puff pastry, thawed if frozen

Milk, to glaze

2lb 4oz asparagus spears

30 cherry tomatoes, halved

4 tbsp clear honey

8 tbsp balsamic vinegar
