Coconut Cheesecake W/chocolate Crust

Ingredients

Chocolate Wafer Crust:

1 ¼ cups Nabisco Famous Chocolate Wafer crumbs¾ cup sweetened flaked coconut5 tablespoons unsalted butter, melted

Coconut Cheesecake:

1 ½ pounds cream cheese, softened¾ cup granulated sugar1 ½ teaspoons vanilla extract4 large eggs½ cup sour cream½ cup coconut milk2 tablespoons dark rum

Coconut Cream Topping:

2 ½ cups heavy cream1 cup sweetened flaked coconut1 tablespoon confectioners’ sugar

Assembly:

1/3 cup sweetened coconut, toasted
