Omilu Ceviche

Ingredients

2 Lbs. Fresh Fish or Omilu1-2 Roma tomatoes, seeded and chopped, (1 cup)1/2 red bell pepper, seeded and small chopped2 sliced green onions, both white and green parts1 small sweet Maui onion, small dice (substitute red onion)2 small jalapeños sliced in rounds with seeds intact, they will not be too hot, they will pickle in the marinade1 hot red chili pepper, seeded and finely chopped, Hawaiian chili pepper or Thai works  well. Both are hot, but this adds a wonderful depth of flavor. Wash hands thoroughly after handling.

Marinade

1/2 cup of fresh lemon juice – 4 lemons1/3 cup of fresh lime juice- 3 limes 2 teaspoons of Hawaiian salt, substitute Kosher 1-2 tbsp. light coconut milk (optional) 1-2 tbsp. orange juice (optional)White pepper, and a pinch of sugar

Garnish

¼ cup of finely chopped cilantroAvocadoRadishesFresh lemon wheel
