Mango Calamansi Cheesecake W/macadamia Gingersnap Crust

Ingredients

Crust:
2 cups ginger snap or graham cracker crumbs
1 stick butter, melted
2 tbsp. sugar
1 tsp. vanilla extract
1/2 CUP Island Princess Macacamia Nuts (chopped)

Cheesecake:
3 blocks of cream cheese, 8 oz each room temperature
1 cup sugar
3 large eggs, ROOM TEMPERATURE
1/2 cup heavy cream
1/2 cup (use 1 cup frozen mango puree, reduced to 1/2 cup for best flavor)
1 tbsp. lemon juice (I USED CALAMANSI JUICE)
1 tbsp. vanilla extract (or the innards of a vanilla bean)

Fruit Topping
1/2 Mango Peeled and sliced thin
Strawberries sliced thin
3 Kiwis, sliced thin

Mango Glaze
1 CUP Mango Puree
1 TBS. SUGAR
1/2 OF A Knox Gelatin Packet
