Pork Roast With Fruit Sauce

Ingredients

1 Pork Loin Roast with bone (3-4#)1 (10 oz.) jar apple jelly1 cup apple juice1/2 tsp. ground cardamom3/4 cup chopped dried apricots1 Tbls. cornstarch2 Tbls. water Bake roast in shallow pan, uncovered 350F for 1 1/2 hours. In a sauce pan combine jelly, juice, and cardamom; cook over med. heat stirring till smooth and heated. Set aside 1/2 cup. Use remaining to baste roast; bake 40-60 minutes longer or until 160F-170F, basting every 20 minutes. Transfer roast to a platter. Pour drippings into saucepan. Add apricots and reserved juice, cook over medium heat till soft. (5 min.) Combine cornstarch & water, add to apricot mixture, cook and stir till mixture boils. (about 2 min.) Serve with roast. (yield: 10-12 servings)
