Moroccan Salad Pizza

  • Extra-virgin olive oil, for brushing
  • Flaked or coarse sea salt, for sprinkling
  • Zahtar spice, for sprinkling
  • Coarse cornmeal, for dusting
  • 2 cups baby arugula
  • 4 hearts of romaine leaves, chopped into 1-inch pieces
  • 1/4 cup torn fresh mint leaves
  • 1/4 cup torn fresh parsley leaves
  • 1 cup cooked beets, diced 1/2-inch
  • 1/2 cup pitted olives
  • 1/4 cup chopped marcona almonds
  • 1/4 cup dates, diced
  • 1 orange
  • 1 small shallot, minced
  • 1/2 teaspoon cumin seeds, toasted and crushed, or 1/2 teaspoon ground cumin
  • Pinch ground cinnamon
  • 2 tablespoons red wine vinegar
  • 1 teaspoon honey
  • Salt and freshly ground black pepper
  • White Sauce, recipe follows
PIZZA DOUGH:
  • 1/2 teaspoon active dry yeast
  • 3/4 teaspoon sugar
  • 3/4 cup lukewarm water
  • 2 cups bread flour, plus more for dusting
  • 1 tablespoon extra-virgin olive oil, plus more for greasing
  • 1/2 tablespoon salt
  • 2 teaspoons coarse cornmeal
WHITE SAUCE:
  • 1/2 cup creme fraiche
  • 1/2 cup Greek yogurt
  • 1 teaspoon lemon juice
  • 1 teaspoon zahtar spice
  • 1/4 teaspoon freshly ground black pepper
  • 2 cloves garlic, crushed and pasted with the flat of a knife
  • Salt
  • Milk, as needed
