Seafood Spring Rolls With Dipping Sauce

Ingredients

2 avocados, diced
2 cups (500g) cooked seafood (crab, prawn, lobster, Moreton Bay/Balmain bugs), shredded or coarsely chopped
3 tablespoons finely chopped sundried tomatoes in olive oil
3 tablespoons finely chopped shallots/spring onions
1/2 -1 tablespoon finely chopped garlic
2 tablespoons fresh lime juice
1/2 teaspoon salt
1 beaten egg
12 large or 18-24 small spring roll wrappers
Light olive oil or vegetable oil, for frying
Dipping Sauce (or use bottled sweet chilli sauce)

Dipping Sauce:
2 garlic cloves
1 small piece fresh ginger
3 -4 sprigs fresh coriander
1/4 cup (50g) peeled, seeded, and coarsely chopped roma tomatoes
1/4 cup rice vinegar
1/4 cup soy sauce
1/4 cup fresh lime juice
3 tablespoons light olive oil or vegetable oil
