For the Dumplings: 1/2 pound center-cut cod fillet 1 large egg 1/4 pound medium raw shrimp, peeled and deveined 1 tablespoon minced peeled fresh ginger 1/3 cup minced water chestnuts 2 scallions, white and green parts, finely minced 1/4 teaspoon ground coriander 1 teaspoon soy sauce 1/4 teaspoon freshly ground black pepper 35 wonton wrappers (about 3 inches in diameter) 3 to 4 large Chinese cabbage or lettuce leaves For the Sauce: 1/3 cup soy sauce 2 tablespoons rice vinegar 1 tablespoon dry sherry 2 tablespoons minced fresh coriander leaves 1/8 teaspoon ground coriander 1/4 teaspoon crushed red pepper flakes (optional)
