Lemony French Toast With Spicy Pecan Bourbon Syrup

Ingredients

For *custard:
6 extra large eggs
½ cup heavy cream (can substitute half & half)
1 lemon – zested and juiced
2 tablespoons granulated sugar
½ teaspoon ground cinnamon (chinese cassia, or vietnamese is best)
¼ teaspoon freshly ground nutmeg
1/8 teaspoon allspice
1/8 teaspoon ground cardamom
unsalted butter for griddle

* custard is best when rested in the refrigerator for at least 30 minutes. It can also be prepared the night before and refrigerated overnight.

For spicy pecan bourbon syrup:
1 cup pecans, chopped
1 stick unsalted butter (8 tablespoons)
½ cup light brown sugar
½ cup light corn syrup
½ teaspoon kosher salt
½ teaspoon ground cinnamon
¼ teaspoon ground allspice
pinch cayenne pepper
½ cup bourbon (use your favorite brand)
2 teaspoons pure vanilla extract
