1/4 cup  lemon juice
2 Tbsp. water
1/2 cup  oil
2 large tomatoes, chopped
1 can  (15 oz.) chickpeas (garbanzo beans), drained, rinsed
1/2 cup finely chopped fresh parsley
1/2 cup  thinly sliced green onions
1/2 cup fresh mint leaves
