  • 1 leek, washed and thinly sliced
  • 1 large eggplant, diced

  • 800 g tomatoes, diced or 1 bottle of tomato puree
  • ½ cup parmesan cheese, grated
  • ½ cup tasty cheese, grated
  • 12 sheets lasagne
  • 1 tbsp olive oil
  • Salt and pepper, to taste
