Osso Bucco With Orange Gremolata

Ingredients

  • 1 cup Coles plain flour
  • 6-8 Coles butcher beef osso bucco, bone in, about 2-2¼ kg
  • ¼ cup Coles olive oil
  • 2 tbsp Coles unsalted butter
  • 2 onions, cut into 2cm pieces
  • 2 celery stalks, cut into 2cm pieces
  • 2 carrots, cut into 2cm pieces
  • 4 cloves garlic, roughly chopped
  • 2 bay leaves
  • 10 stems parsley
  • 2 cups Marsala or white wine
  • 6 cups Coles chicken stock
  • 3 cups cherry tomatoes, cut in half
  • Zest of 2 oranges
  • 4 tbsp fresh parsley, chopped
