Ingredients

  • 2 small leeks, white and light green parts only, sliced thin
  • 1 tablespoon [15 mL] molasses, dark brown sugar, or dark corn syrup
  • 5 cups [1.2 L] veal, beef, or pork stock
  • 6 whole allspice berries
  • 9 whole white peppercorns
  • Salt to taste
  • 1 pound [450 g] ground veal
  • 6 ounces [180 g] lean ground pork
  • ⅓ cup [80 mL] dry breadcrumbs
  • 2 teaspoons [10 mL] salt
  • 1 teaspoon [5 mL] white pepper
  • 3 tablespoons [45 mL] onion, grated
  • ⅔ cup [160 mL] heavy cream
  • ½ cup [120 mL] water
  • Chopped parsley, for garnish
