Jerk‐Marinated and Smoked Pork Spareribs

Ingredients

  • 2 pounds [900 g] turkey breast
  • 4 cups [960 mL] chicken or turkey stock
  • 2 garlic cloves, minced
  • 6 tablespoons [90 mL] sesame seeds
  • ½ teaspoon [3 mL] black peppercorns
  • ⅓ cup [80 mL] pumpkin or squash seeds, hulled, unsalted
  • 1 cinnamon stick, broken into pieces
  • Liberal pinch of ground cloves
  • 1 ripe tomato
  • 3 tomatillos, husked and rinsed
  • 1 small onion, peeled and halved
  • 2 garlic cloves, peeled
  • 2 dried Guajillo or New Mexico red chiles
  • 2 red bell peppers, chopped
  • 1 teaspoon [5 mL] achiote
  • 1 teaspoon [5 mL] sugar
  • Salt to taste
  • ½ cup [120 mL] unseasoned breadcrumbs, toasted warm tortillas
