- 1 bay leaf, crumbled
- 1 medium onion, coarsely chopped
- 1 celery rib, coarsely chopped
- 1 carrot, scraped and coarsely chopped
- 4 medium canned beets, diced
- One 14½-ounce can diced tomatoes, juice included
- 2 cups finely shredded green cabbage
- 1 medium potato, peeled and diced
- 2 tablespoons red wine vinegar
- 1 tablespoon snipped fresh dill
- Sour cream, for garnish (optional)
