Ingredients

  • 2 Tbsp Extra Virgin Olive Oil
  • 3 ea Leek , washed well and diced2
  • 2 tsp Minced Garlic , fresh
  • 1 stalk Celery , leaves removed and diced small
  • 5 ea Plum Tomato , ends removed, sliced lengthwise, seeded and diced
  • 2 cup White Wine
  • 1/2 cup Pernod
  • 1/8 tsp Saffron , threads
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper , ground
  • 3 lb Mussel , beards removed, scrubbed and cleaned very well
  • 1/2 cup Parsley Italian Fresh , stems removed, leaves chopped
  • 1/2 tsp Thyme Fresh , pulled from stem and chopped
