Ingredients

  • 2 med Onion , peeled and cut into 1 inch pieces
  • 2 med Red Pepper , seeded and cut into 1 inch pieces
  • 7 clove Garlic , peeled, whole
  • 1 med Zucchini , ends removed, cut lengthwise, seeded and cut on a diagonal
  • 1 med Yellow Zucchini , ends removed, cut lengthwise, seeded and cut on a diagonal
  • 8 oz Mushroom , stems removed, quartered
  • 4 oz Shiitake Mushroom , stems removed, sliced
  • 1 ea Japanese Eggplant , ends removed, cut lengthwise, seeded and cut on a diagonal
  • 1 bulb Fennel , ends removed and sliced very thin
  • 1/4 cup Basil Fresh , stems removed, leaves chopped
  • 1 tsp Salt
  • 1/2 tsp Black Pepper , ground
  • 3 Tbsp Extra Virgin Olive Oil
