For the Dough:

2 cups all purpose flour
½ tsp salt
1 even teaspoon baking powder
150 g cold butter, sliced
¾ cup sugar
1-2 tablespoons honey
1 egg yolk
½ teaspoon Rum extract
¼ cup cold water (plus extra if needed)

For the Filling:

1 ½ cup coarsely chopped walnuts
1 ½ cup sugar
¼ cup cold water
½ cup low-fat cream
2 tablespoons honey
3 tablespoons dark rum

For the Icing:

2-3 tablespoons castor sugar
1 cup sweetened whipping cream
3 tablespoons sour cream
1 teaspoon orange zest
1 teaspoon lemon zest
3 tablespoons orange juice
1 tablespoon lemon juice
