Ingredients
Sweet tart pie crust ingredients:1 1/2 cups of all-purpose flour
1/2 cup of confectioners' sugar
1/4 tsp. of salt
1 stick + 1 Tablespoon of butter ( very cold and cut up into small pieces )
1 egg yolk ( slightly beaten )
Lemon Filling:
1 1/2 lemons, scrubbed and dried
1 1/2 cups of granulated sugar
1 large room temp. egg
2 large room temp. egg yolks
1 1/2 tablespoons of cornstarch
1/2 cup of heavy cream ( I only had half and half and it still worked )
1/2 stick ( 4 Tbsp. of butter ) melted and cooled
