RUM SYRUP
1/3 cup white sugar
1/3 cup water
1/3 cup light rum
RICOTTA CHEESE FILLING
2 pounds whole milk ricotta cheese
2 1/4 cups confectioners sugar
4 ounces semi-sweet chocolate bar chopped roughly, pieces should not be larger than 1/2 inch
SUGAR FROSTING FOR TOPPING (prepare the following day)
1 1/2 cup confectioners sugar
1/4 cup water
grind of a lemon or lime
