Ingredients
3 (24oz cans) of tomato (1 crushed, 1 sauce, 1 pureed)1 (15oz can) of diced tomatoes
One onion diced
One green bell pepper diced
2 Carrots diced
1 tbsp garlic (or more depending on taste)
~1 to 2 cups greek yogurt, depending on how much tomatoes and how creamy you want it.
~ 1 Tbsp dried Basil (Triple if fresh basil)
~ 1 Tbsp dried Oregano (Triple if fresh oregano)
~1 Tbsp dried Thyme (Triple if fresh thyme)
~1 tsp Celery salt
Salt and pepper to taste
Serve over quinoa pasta
