Ingredients

Pastry:
300 grams of flour,
150 g butter,
100 grams white sugar
50 grams sugar cane
1 whole egg more plus 1 yolk
½ grated lemon zest
Pinch salt

Filling:
400 grams ricotta cheese,
2 eggs,
150 grams sugar,
1 grated lemon zest
1 grated orange zest
1 tablespoon flour
150 grams raisins
candied orange to taste ( chopped )
3 tablespoons orange marmalade optional
