Mother's Day Breakfast

Ingredients

Nothing makes for an easier or more delicious breakfast than a frittata. There are so many different ingredients and variations to choose from; you can tailor one perfectly to your mom's tastes. And, many of the ingredients are probably already sitting in your fridge.



The basics: Eggs, olive oil, salt, pepper, veggies and protein. Choose from turkey, chicken, sausage, bacon or tofu and don't forget your mom's favorite cheese!

For a delicious vegetarian version of the frittata, make Mom this scrumptious potato, pepper and egg one from Expert Andrea Correale. She serves a mini version, which is perfect for a special breakfast, but this can easily be made into a one plate meal.

If you're looking for a version with meat, try adding chopped sausage.


Once your frittata is prepared, round out the meal with fruit salad. Include bananas, apples, peaches and pears with a little squeeze of fresh lemon juice on top to keep the fresh fruit from browning. And allow mom to relax with a Strawberry Bellini so she feels like a queen!
