Double Ginger Snaps

Ingredients

3/4 Cups (1 1/2 sticks) unsalted butter
1/2 Cup sugar
1/2 Cup brown sugar
1 large egg
2 Tablespoons fresh ginger, grated
2 Teaspoons ground cinnamon
1 Teaspoon ground ginger
1/2 Teaspoon vanilla extract
1 Tablespoon molasses
2 Tablespoons honey
2 Cups all-purpose flour
1 Teaspoon baking soda
Pinch of salt
Coarse sugar for topping cookies (Optional but a nice touch)

Microplane zester for ginger
