Ingredients
2 ounces dried shiitake mushrooms
3 Cups water
6-8 Tablespoons olive oil
2 pounds chicken, cubed (you could sub 1 pound of shrimp for one pound of chicken)
1 pound mixed mushrooms, I used a mix of shiitake and oyster
1 onion, diced
4 cloves garlic, minced
1 1/2 Cups short grain white rice (paella rice)
1 15 ounce can diced tomatoes
1 Tablespoon chili powder
1 Teaspoon smoked paprika
1/2 Teaspoon saffron threads, soaked in a bit of warm water
2 Cups chicken broth
Chopped parsley (garnish)
Allioli recipe (Served with paella)
4 garlic cloves, halved and center germ removed
1/2 Teaspoon fine salt
2 large egg yolks
3 Tablespoons water
2 Tablespoons sherry or red wine vinegar
1 Cup light olive oil
Fresh black pepper
