1 1/2 Cups dried black beans, soaked overnight (or two 15 ounces cans black beans)
1 1/2 Cups long grain rice (I used brown rice, but white rice would be quicker)
1 medium onion, diced
1 red pepper, diced
2 cloves garlic, minced
2 Tablespoons olive oil
1 Teaspoon cumin seeds
1 15 ounce can diced tomatoes
1 small can roasted green chilis
1/2 Teaspoon cayenne (opt.)
2 Cups Tortilla chips, crushed (for topping)
Salt and pepper
Hot sauce (for serving)
