Savory Pancakes With Chicken Curry

Ingredients

Chickpea Pancakes (Adapted from a Socca recipe from Kalyn's Kitchen)
I tripled the original recipe because I figured I'd screw up a bunch of them... I was right.

3 Cups Chickpea flour
3 1/4 Cups water
2 Teaspoons kosher salt (or 1 Teaspoon regular)
1 Teaspoon whole cumin seeds or 1/2 Teaspoon ground cumin
1/4 Cup olive oil (plus a bit more for the pan)

Chicken Curry:

2.5 pounds boneless skinless chicken thighs
1 medium onion, diced
1 red pepper, diced
2 inches fresh ginger, minced or grated
3 cloves garlic, minced
3 Tablespoons neutral oil (like canola)
3 Tablespoons yellow curry powder
2 12 ounce jars of mango chutney
1 15 ounce can coconut milk
2 Cups water
2 Cups golden raisins
2 Tablespoons brown sugar
Pinch of salt

Description

Chickpea Flour Pancakes With A Sweet And Savory Chicken Curry On Top. This Could Easily Be A Brunch Or A Dinner.
