Ingredients

  • 1½ kg beef bones, sawed into 5cm pieces
  • ⅓ cup can tomato paste
  • 1 cup chopped onions
  • ½ cup chopped celery
  • ½ cup chopped carrots
  • 1 cup claret wine
  • 10 peppercorns
  • 3 garlic cloves, peeled
  • 3 bay leaves
  • ½ tsp dried thyme
  • Flaked salt
  • Freshly ground black pepper
  • 5½ ltr water
