Ingredients
- 1 Tbsp butter
- 1 Tbsp oil
- 1 small onion, finely chopped
- 1 red capsicum, seeded and chopped finely
- 1 green capsicum, seeded and chopped finely
- 1 stalk celery, finely sliced
- 2 rashers bacon, rind removed and chopped, or 3 Tbsp bacon pieces
- 3 cups long grain rice that has been cooked in chicken stock the day before
- 1 egg beaten
- Soy sauce, to taste
- 1 Tbsp fresh coriander, chopped
