Ingredients
- 500g chicken liver, fresh and trimmed
- 1 medium onion, finely chopped
- 1 clove garlic, minced
- 1 cups chicken stock
- Flaked salt
- 2 Tbsp butter
- 1 Tbsp oil
- ¾ tsp white pepper, freshly ground
- ¾ tsp cognac or grand marnier if you like an orange flavour
- ½ cup thickened cream
- 1 qty Aspic Jelly, freshly made and still warm
- or
- 125g butter, melted gently so it doesn't separate
