Chicken Liver Pate

Ingredients

  • 500g chicken liver, fresh and trimmed
  • 1 medium onion, finely chopped
  • 1 clove garlic, minced
  • 1 cups chicken stock
  • Flaked salt
  • 2 Tbsp butter
  • 1 Tbsp oil
  • ¾ tsp white pepper, freshly ground
  • ¾ tsp cognac or grand marnier if you like an orange flavour
  • ½ cup thickened cream
  • 1 qty Aspic Jelly, freshly made and still warm
  • or
  • 125g butter, melted gently so it doesn't separate
