  • 2 medium onions, chopped
  • 1 carrot, peeled, diced
  • 1 celery stick, diced
  • Sprigs of fresh robust herbs (sage, oregano, marjoram, bay leaf, thyme, lemon savory, rosemary) tied together to make a bouquet garni
  • ½ cup dry red wine
  • 400g chat potatoes, scrubbed and halved
