- ½ cup black olives, pitted
- ½ red onions, diced or sliced thinly
- 1 Tbsp mint or parsley or combination of both, chopped
- Olive oil, to taste
- 2-3 Tbsp balsamic vinegar (or caramelised balsamic vinegar)
