Ingredients

  • 2 cups seedless watermelon, cubed
  • 250g feta, cubed or crumbled
  • ½ cup black olives, pitted
  • ½ red onions, diced or sliced thinly
  • 1 Tbsp mint or parsley or combination of both, chopped
  • Olive oil, to taste
  • 2-3 Tbsp balsamic vinegar (or caramelised balsamic vinegar)
