  • 500g loin of pork
  • 3-4 pork rib bones
  • 3 Tbsp olive oil
  • 2 cloves garlic, very finely chopped
  • 2 x 6cm sprigs rosemary finely chopped
  • 1 Tbsp finely chopped fresh fennel leaves
  • 1 onion, diced
  • 1 carrot, diced
  • 1 stalk celery, sliced
  • ½ cup dry white wine
  • ½ cup water
  • Flaked salt, to taste
  • Freshly ground black pepper, to taste
  • Chunks of potato and bulb fennel or small peeled turnips and onions
