Ingredients

  • Biscuit base:
  • 3 eggs, separated
  • 1 teaspoon vanilla extract
  • 175g caster sugar
  • 65g flour
  • 65g cornflour
  • 1 teaspoon baking powder
  • Chocolate mousse:
  • 500ml cream
  • 2 bars dark chocolate
  • 1 teaspoon instant coffee granules
  • 2 sachets whipped cream stabiliser
  • Raspberry filling:
  • 1 (300g) pack frozen raspberries
  • sugar to taste
  • 4 tablespoons cornflour
