Venison Goulash

Ingredients

  • 4-5 juniper berries
  • 1 pinch of ginger
  • 1 pinch of cinnamon
  • 1 pinch of allspice
  • 1kg diced venison
  • salt and freshly ground black pepper to taste
  • 2 carrots
  • 1 small leek
  • 6-8 shallots
  • 2 tablespoons butter
  • 50g bacon
  • 1/4 teaspoon dried thyme
  • 1 bay leaf
  • 250ml dry red wine
  • 250ml water
  • 125ml cream
  • 1 tablespoon cranberries (optional)

Description
