- 2 tablespoons sunflower oil
- 2 bay leaves, crumbled
- 4 green cardamom pods, split open at the top
- 5 cm (2 in) cinnamon stick, broken in half
- 4 cloves
- ½ - 1 teaspoon cayenne pepper
- 2 teaspoons ground coriander
- 1 teaspoon ground cumin
- 2 teaspoons garlic purée, or crushed garlic
- 2 teaspoons ginger purée, or grated ginger
- 1 teaspoon paprika
- ½ teaspoon turmeric
- 125 g (4½ oz) canned chopped tomatoes
- Salt
- ½ teaspoon garam masala
- 2 tablespoons chopped fresh coriander
- To garnish: chopped fresh coriander, sliced cucumber and red onion
