Aromatic Spiced Lamb Cutlets

Ingredients

  • 8 lamb best end of neck cutlets, about 400 g (14 oz) in total, trimmed of fat
  • 1 tsp cumin seeds
  • 1 tsp coriander seeds
  • juice of 1/2 lemon
  • 2 garlic cloves, crushed
  • 2 tbsp extra virgin olive oil
  • salt and pepper
  • sprigs of fresh mint to garnish
  • Minted yogurt sauce:
  • ¼ cucumber
  • 150 g (5½ oz) plain low-fat yogurt
  • 1 garlic clove, crushed
  • 1 tsp bottled mint sauce
  • 1 tbsp chopped fresh mint
  • Apricot and almond couscous:
  • 280 g (10 oz) couscous
  • 100 g (3½ oz) dried apricots, chopped
  • 500 ml (17 fl oz) boiling vegetable stock
  • 50 g (1¾ oz) whole blanched almonds, toasted
  • 2 tbsp chopped fresh mint
  • 2 tbsp chopped fresh coriander
  • juice of ½ lemon
  • 2 tbsp extra virgin olive oil
