- 200g new potatoes, scrubbed and cubed
- 1 carrot, peeled and sliced
- 150g fine green beans, trimmed and chopped
- 1 courgette, sliced
- 150g frozen peas
- 200g Greek yoghurt
- 300g basmati rice, rinsed
- pinch of saffron
- TO GARNISH:
- 1 tbsp toasted flaked almonds
- fresh coriander sprigs
- 3 hard-boiled eggs, quartered
