- 200g fresh or tinned pineapple chunks, finely chopped
- 1 mild red chilli, finely chopped
- 1/2 red onion, finely chopped
- 1 teaspoon caster sugar
- Few sprigs coriander, finely chopped
- Zest and juice of 1/2 lime
